Make the most delicious lemon rosemary shortbread cookies with fresh rosemary & lemon juice and zest!

Cream the sugar & butter together

Add the egg yolk, lemon juice & lemon zest

Then add the flour, arrowroot powder, rosemary, & salt

Stir until the dough begins to hold together

Remove from bowl & form a log

Wrap in parchment paper & refrigerate until firm

Slice into rounds

Lay the rounds evenly spaced on a baking tray & bake for 25 minutes until brown
