How to Make Grapefruit Curd

Zest the grapefruit using a microplane

Juice the grapefruits until you have one cup.  Simmer the grapefruit juice over medium heat until reduced by half.

Cream the butter & sugar in a metal bowl before whisking in the eggs one by one.

–Stir in the zest & salt, then slowly add in the grapefruit juice & lemon juice, stirring as you go.

Create a double boiler with your metal bowl on top. Stir constantly so it doesn't curdle.

Continue to heat the curd & stir frequently.

Once it has thickened enough to coat the back of a spoon, it's done.

The grapefruit curd will thicken as it cools.
