These no-bake pumpkin coconut cups are grain-free & gluten-free

Add shredded coconut to a food processor

Process until the coconut turns from a powder into butter

It should be completely smooth

Add the butter to a pot with pumpkin puree, maple syrup, coconut oil, & spices

Heat on very low just to keep mixture soft

Fill cupcake liners 3/4 of the way full

Press down the pumpkin coconut mixture into each cup

Top each cup with chocolate chips & pumpkin seeds before chilling in the fridge for a few hours
