If you find yourself with an abundance of unripe tomatoes this time of year, canning a batch of green tomato salsa verde is in order!

Combine the tomatoes, hot peppers, onion, garlic, & lime juice in a large saucepan. Bring to a boil, then stir in the cilantro, cumin, oregano, salt, & pepper. Reduce the heat & simmer for 5 minutes.

Fill your canning jars, leaving a 1/4" headspace & apply lid and band.  Process for 20 minutes in a water bath canner.

Serve it with grilled fish, over enchiladas, on top of tacos....

or simply with your favorite tortilla chips!
